Stainless steel is a highly durable material and doesn’t chip, peel or scratch easily like soft metals such as aluminium. As chefs have to handle vigorous, pan-clanging cooking day in and day out, they tend to lean toward stainless steel cookware instead of aluminium cookware.

Another massive reason why stainless steel cookware has always been the chef’s favourite is the fact that it doesn’t react with acidic foods. This means, unlike aluminium cookware, stainless steel keeps metals from leaching into your meals, resulting in healthier and tastier servings.

However, aluminium cookware has its own set of advantages too. For example, aluminium is a faster and more responsive conductor of heat, making it a great choice for fry pans. 

Ceramic frying pans are made from a non-toxic, non-reactive material that is known for its non-stick properties and fast heating capabilities. They are ideal for cooking delicate dishes and reducing the amount of oil needed for cooking. However, they are prone to scratching and may not be suitable for high-heat cooking.

In contrast, French skillets have higher and straight sides, allowing you to cook more food but making it harder to flip.

A French skillet is a heavy and thick saucepan usually larger, flatter, and deeper than a regular frying pan. Its size ranges from 9-11 inches, but some come in 8 or 12 inches.

A sauté pan is better suited than a stockpot for holding liquids, reducing splashing, and cooking many foods at once. The biggest disadvantage of the sauté pan is its size. You’ll notice this since the 12-inch sauté pan is significantly larger than the skillet.

In the labs, we put the carbon steel pans through the same tests as our cast-iron pans: heating evenness, baking, and browning. You have to keep carbon steel pans seasoned, like cast iron, but if you do, they soon develop a smooth patina that makes a pan as slick as nonstick, giving you even more cooking possibilities.

French skillets are durable because they are all-clad stainless steel with an aluminum or copper interior.  Stainless steel resists corrosion, so the skillet will last longer with less risk of metal seeping into the meal.
